  1. Make the dough: Dissolve yeast in lukewarm water. Combine flour and salt, add water mixture. Knead 10 minutes until smooth and elastic. Cover and refrigerate 72 hours.
  2. Shape: Remove dough 2 hours before baking. Divide into 250g balls. Gently stretch each ball into a 12-inch round, leaving edges thicker for the cornicione.
